Nettle pies are original and delicious pastries. And in terms of benefits, this green is not inferior to any other. It is not difficult to prepare such pies, all the necessary ingredients can be found in the refrigerator or in the nearest store. You just need to find out in advance some of the nuances and secrets regarding this baking.

Cooking features

The dough for such pies is not the main thing. It can be yeast (purchased or homemade), and flaky, you can even wrap the filling in thin pita bread. Therefore, special attention is paid to their content. Nettle does not impart any specific taste to pies; it is "responsible" for the undoubted health benefits of baking and the original aroma.

It is critically important to use proper quality and environmentally friendly greens for the filling. It is collected as far as possible from settlements and, in general, any civilization, especially from highways and industrial enterprises.

The most juicy grass with a pronounced aroma should be sought along the banks of reservoirs or in the lowlands. Her leaves are darker and larger than usual. The first nettles (May and June) are collected simply by hand. Thick gloves should be worn in mid-summer and beyond.

To turn nettle into a "semi-finished" filling for pies, you need to get rid of the stems of both the lowest and the oldest dried leaves. The remaining greens are poured with boiling water for a couple of minutes, then about the same with ice (or at least very cold) water.

Pies with nettle, cottage cheese and onions

A dough that works for other recipes too. The baking turns out to be tender, fluffy, does not stale for a long time. Would need:

  • wheat flour of the highest grade - 500 g;
  • sour cream 20% fat - 200 g;
  • chicken egg - 3 pieces;
  • vegetable oil (sunflower or olive) - 100 ml;
  • sugar - 70 g;
  • dry yeast - 1.5 tsp;
  • salt - 1 tsp

Ingredients for the filling:

  • cottage cheese - 400 g;
  • fresh nettle - 100 g;
  • any fresh greens - to taste and as desired;
  • chicken egg - 2 pieces (one for the filling, the second for greasing the finished pies before baking).

How are nettle patties made:

  1. Pour butter, sour cream into a deep container, break eggs, shake slightly.
  2. Sift flour there, gradually add sugar, salt and yeast.
  3. Knead the dough for 10-15 minutes, cover the container with cling film, leave warm for an hour. Wrinkle lightly, stand for another hour.
  4. Boil a hard-boiled egg, chop. Finely chop nettle and onion, mix everything with cottage cheese. For uniform consistency, beat everything with a blender.
  5. Gradually separate the portioned "balls" from the finished dough, flatten into flat cakes, put the filling in the center and carefully pinch the edges. The form is at your discretion.
  6. Place the patties on a greased or parchment paper lined baking sheet, seam side down. Let stand for 25-30 minutes. Brush with whipped egg yolk on top.
  7. Bake in an oven preheated to 180 ° C for 25-35 minutes.

    Important! The fat content of the cottage cheese in this recipe is not fundamental, but you need to pay attention to the consistency - it should be dry, not pasty.

Nettle and egg patties

In all the usual pies with green onions and eggs, the first ingredient in the filling can be replaced with nettle. For 0.5 kg of ready-made yeast dough you will need:

  • fresh nettle - 100 g;
  • leeks (or regular green) - 50 g;
  • chicken egg - 3 pieces;
  • salt - to taste (about 5-7 g);
  • sunflower or olive oil - 3 tbsp. l.

How the filling is prepared:

  1. Hard boil the eggs, chop finely or mash with a fork.
  2. Chop the onion and fresh nettles.
  3. Mix eggs and herbs, add salt and vegetable oil, mix well.
  4. Form pies, put on a baking sheet, brush with yolk. Bake for about half an hour in the oven at 180 ° C.

    Important! It is better to let the finished pies lie on a plate or napkin under a clean towel for about half an hour. This will make the baked goods juicier.

Nettle and spinach patty recipe

The filling contains (for 1 kg of dough):

  • spinach - 200 g;
  • fresh nettle - 200 g;
  • medium onion - 1 piece;
  • mushrooms - 200 g;
  • cheese (any hard) 100 g;
  • salt and pepper to taste;
  • vegetable oil - for frying.

It is prepared according to the following instructions:

  1. Fry finely chopped onions in a little oil until golden brown. Add mushrooms to the same pan, fry until tender. Place on a paper towel to drain off excess oil.
  2. Blanch the herbs for 2-3 minutes. Drain the water through a colander.
  3. Mix all the ingredients for the filling, season with salt and pepper.
  4. Make open patties. Sprinkle with grated cheese on top.
  5. Bake for half an hour at 200 ° C.

    Important! If desired, you can add other ingredients to the filling - boiled rice, cottage cheese or soft cheese (about 200 g), other fresh herbs to taste.

Delicious nettle pies with cheese

What is required for the filling:

  • fresh nettle - 100 g;
  • green onions - 50 g (if desired, if you do not put it, you need to increase the mass of the nettle accordingly);
  • soft goat cheese - 100 g;
  • butter - for frying;
  • egg yolk - for lubrication.

The pies are prepared like this:

  1. Finely chop nettles and onions. Fry for 2-3 minutes in melted or butter.
  2. Mash the cheese with a fork, mix with cooled herbs.
